What is Kombucha? Kombucha is a sweet fermented tea that is becoming increasingly popular as a healthy, hip drink. Kombucha is made by fermenting tea by using a Kombucha culture also known as a Scoby (symbiotic colony of bacteria and yeasts). The Scoby nourishes itself with the sugar in the tea and produces healthy bacteria.
