Bacillus Bulgaricus Yoghurt Starter makes real Bulgarian yogurt of exceptional quality with classic Bulgarian yogurt flavor, thickness, acidity and aroma. The yogurt is thick and creamy in nature and has an impeccable flavor with the perfect balance of mild and tart. It's unlike any other yogurt you've ever tried. This is an authentic classic original Bulgarian yogurt starter culture made with natural lactic acid cultures, isolated from natural sources in ecologically protected areas in Bulgaria. It is produced and packaged in Bulgaria. Each pack contains a loose powder mix, in perfect proportions, of the two types needed to make Bulgarian yogurt - lactobacillus bulgaricus and Streptococcus thermophilus. It makes thick, creamy and absolutely delicious yogurt.

This Bulgarian yogurt starter is completely natural without additives, preservatives, artificial colors or flavors. It contains no GMO ingredients and is gluten free. It is manufactured and harvested in a strictly regulated sterile environment so that it does not contain or have been in contact with nuts, soy and other common allergens. This is a heirloom yogurt starter with live active bacteria, which means you can reuse yogurt from your previous batch to grow a new batch.

Each pack contains freeze-dried live active yogurt starter cultures. Because the bacteria is grown on organic dried milk powder, the package also contains a very small amount of dried organic milk powder, which is completely consumed by the bacteria during the fermentation. The resulting yogurt is completely lactose free when made with dairy milk and completely dairy free when made with dairy free milk.

Storage: It is best to store the yoghurt starter in the FREEZER. These yogurt starters are shipped in sealed bags. Sending the pouches (i.e. shipping them to you) at ambient temperatures (even during hot days) is no problem and will not damage the live yogurt cultures. Once you receive the starters, place them in the fridge or freezer for best storage.

  • You can store the bags in the freezer, at about -18°C or below, for 2 years.
  • You can keep the bags in your refrigerator for 1 year, at about 4°C.
  • You can keep the bags at room temperature for about 6 months.

HOW DO YOU USE THIS YOGURT STARTER?

With this yogurt starter it is super easy to make yogurt. You can make your own yogurt with or without the help of a yogurt maker. When you introduce the live yogurt culture to milk, the streptococcus thermophilus bacteria comes into action first and prepares the perfect environment for lactobacillus bulgaricus, which begins to multiply and slowly transform the milk into real Bulgarian yogurt. These 2 beneficial bacteria work together in the fermentation process that makes milk the best yogurt in the world. The process takes approximately 6-10 hours to complete.

You can use any type of milk you want: cows, sheep, goats, skim, whole, raw, pasteurized, dairy or non-dairy, it always works! The following 6 easy steps explain how to prepare your own yogurt without the help of a yogurt maker. If you have a yogurt maker and wish to use it instead, just follow the instructions that come with it.

Yogurt starter recipe

The instruction below is for 1 liter of yogurt, so if you want to make more or less, adjust the quantities in proportion.

Use 1 liter of milk per 1 gram of yogurt sarter (slightly more than 1/4 teaspoon). In preparation, bring the milk to a boil. The milk has to boil to kill any bacteria present that may react with the Lactobacillus Bulgaricus. Milk boils at about 100C. Be careful not to burn the milk or you will end up with a burnt taste. Cool the milk to 43*C. The easiest way to test the correct temperature is to dip your little finger in the milk, if you comfortably count to 5 the milk is just right. Move the milk to a separate container. You can also use several smaller glass jars. Add 1/4 teaspoon of the starter. Mix everything well. This is important! Stir well up to 3 ~ 4 minutes (do not use mixer, stir by hand). If you used more than 1 container, spread the contents of the bag evenly. Cover the container or jars loosely with a lid. Do not close it airtight. Wrap the container tightly in blankets or cover with a tea cozy and place in a quiet, warm place. The yogurt will be ready in about 5-6 hours. If the place is cold, the process may take longer (10-12 hours). You can easily check whether the yogurt is ready by tilting the container a bit, the content must be firm (set yogurt). For a firmer yogurt with a more acidic taste, you can let the yogurt stand longer (eg overnight). Your yogurt is now ready to enjoy! Doesn't the yogurt taste incredible!

Tip: Store the remaining yogurt starter in a Ziploc bag in the freezer. The starter is very hydrophilic, if moisture gets into the bag, the starter will quickly break down.
